i tested the water and the PH was five with 1.0 ammonia (using API test kit) my tap water is PH7.5 with high chloramine content

I'm assuming the water that is ph 5 is out of the tank...if the water out of the tap is 7.5? Have you tested the water hardness?

I think the discrepency in growth rates comes down to the care they recieve from the owner. Daily water changes and small but regular feeds throughout the day seem to give far better growth results than the normal water changes and feeds which most people give. I'd imagine it's just a pattern variant, albeit a slightly more varianted version than the usual ones we see but nothing more odd that that...pretty fish though.
