I'm not sure I see the problem :) The snails will eat any leftovers, they can be used to artificially hatch eggs, they contribute to the ecological balance of the tank and - the Zebras do eat them!
They're not pretty though, I admit, still :cheers: for the little black snails!
Do not put loaches ...

Have a look at http://www.zebrapleco.com/article2.php it's few general guidelines in the article. Well oxygenated water seem to be more important than the current itself, except when you want them to spawn.

I wouldn't worry about them not using the caves, they're only babies yet, and would feel more secure in the company of eachother. If the food is gone in the morning then they're eating, so no need for concern there.

Finally I got hold of a nice group, so I can start working with Zebras again. I have the other 9 pretty much covered, but I'm unsure about this one... This is the smallest one in the group, but should still be sexable...? I'd be glad to hear your opinions.
