are there such things as in breeding with fish? could i keep females from my fry and use in the same tank or would this cause deformed fish? is three years the age of the when they are sexually mature

Yes there is, but fish are not as suceptible to damage from it as mamals are. You will however soon notice a decrease in the ability to produce viable offspring after a few generations. (at least this is the case with Killies, we don't really have enough material to know the effect of inbreeding in Zebras)

Best bet is to swap fry with other breeders to keep fresh blood coming in to your stock.
